These gloves are touch screen compatible; very thin with some work-touch sensitivity. I use mine to manipulate small cable TV fittings. I'd probably shop for heavier rubber gloves with an emphasis on slip and pinch resistance, insulated against cold perhaps, were I to handle shellfish as a job. Like a lobster boat? No, I can't recommend these particular gloves for that work.

How well do these hold up to potential needle sticks?

This type of glove, as with most of these "safety" gloves, especially for carving is they do help in preventing slash cuts... punctures like with a needle or knife...etc... are not to be stopped by a loose weave such as these. I seem to be repeating myself.
