the flavor is just delicious. I use it on salads, meat, fish, pasta - almost anything to add zing and flavor to meals of all kinds. It has a sweet vinegar flavor and is thicker than most vinegars so it can be used by itself (forget the oil part) as salad dressing, sauce, or topping

I love this aged balsamic, but it's a very expensive habit. Another excellent one I tried is from a very small producer: Noisy Water Winery. Of course, that one was more expensive. The joke is I used it very sparingly so it lasted a while. This one being a little less costly seems to encourage me to pour it more liberally; so, in the end, I’m not sure it’s really a savings. Still, if you use a lot of aged balsamic Calivirgin is a more economical way to go, especially in the one liter container.
