Do they work on thin hair

I’d say yes. My hair is pretty thin, and the clips hold it well. There are also “bobby pin” styles, although much more decorative than plain bobby pins, that stay in my hair very well.

are the ends of the clips covered? I'm wanting to use to hold hair in place in a bun on my head, would these work?

No, they're not covered, they're all that smooth faux gold. You might be able to attempt to use the bobby pin shaped ones if you spray them with hair spray to give you some tacky grip. However, that could end up ruining the clip itself.
