Because they probably lie ... but it's still a nice shirt, fits well and will work for my purposes.

what is the sleeve opening for large ? xl ? muscular arm not sure will fit.

I'm 185 and workout. Muscular arms. Large was fine. I'm 5'8"

Why isn’t polyester listed as the fabric?

Because there's no polyester in it. It's linen and rayon. Both of those materials come from plants. (Yes; Rayon. Look it up.)
