Wondering if these would work with an iron trying to do a photo that is to big to fit in the machine?

You could try it with an old photo that you don't mind losing if it doesn't work. I would work on a very firm surface (as opposed to an ironing board) and start with the iron at a low setting.

Do these work for dry erase?

Yes, you can write on them and then erase them if you don't let the dry erase not sit there for days on end.
