Why would you have chickpea, lentils, and dandelion greens as ingredients for cats? Cats don't have enzymes to break down carbohydrates.

I agree with the question. The typical response of there being veg in the stomachs of the prey cats eat does not take into consideration that the prey itself (not the cat) has the digestive enzymes to break it down. So a bunny has the enzymes to break down the carrot it ate and the cat consumes both. On its own, the cat is a carnivore. The grass they sometimes eat is a roughage, not for meal.
