What’s the difference in magic kingdom compared to Disneyland edition?

Per the descriptions, it appears the difference is just that the magic kingdom version has "Special glow-in-the-dark Hitchhiking Ghosts and a commemorative 50th anniversary foil seal.". So the ghosts glow in the dark even though you can't play the game in the dark, and there is an extra sticker on the outside of the box.

What game is this most like? example... life, clue, monopoly etc.

If you’re looking for a mass market game like the ones you listed, this may not be for you. This is more of a gateway hobby board game, utilizing a mechanism known as “set collection”: object is to collect cards that make up a set, where the generally having more cards, or some specific combinations of cards in a set, creates the most points. Others have mentioned sushi go (another gateway game), but you can think of this as a board game version of Rummy/Gin Rummy

do either of the boards have glow in the dark words/images, or is it just the hitchhiking ghosts? Does the disneyland version have any glowing parts?

The version I bought has no glowing parts iirc. My understanding (from reading info and reviews online before purchasing) is that the glow in the dark version does NOT have any glowing ink on the cards or board, so you can't actually play the game in the dark. The hitchhiking ghosts are more of a gimmick. As in: A glow-in-the-dark toy that kids might enjoy. Not useful for gameplay, though.
