So this tree will not fit in room with 8-ft ceiling???

The KW7-500-90 would not, no... it is 9' including the stand, and using a different stand wouldn't bring it under 8'. I suppose you could leave out the bottom section but I would suggest a smaller tree. Be careful, there are multiple sizes listed here.

Is the "trunk" covered so metal won't show?

The green metal trunk is wound with needles starting right above the stand, but it doesn't completely cover the metal (maybe 30% coverage.) That is just camouflage, as it's not natural that needles would be on the trunk like that. Complete "fluffing" of each branch to fill the space and decoration makes it difficult to see the metal anywhere but on the bottom, though.
