You can boil less with no issues. Slightly more was also acceptable.

Does this ever get that metal taste?

We’ve haven’t noticed a metal taste. We use ours everyday for coffee.

Why do I have to unplug it?

You would only need to unplug it to move to a different location. The pot comes off the base when pouring.
