Is this capable of starting up a V8? and I don't mean the tomato juice...:)

I it fires my 2020 Lexus 5.7 liter V8 right away with absolutely no problems. I've noticed on my 2016Ford Explorer twin turbo ecoboost if the battery 100% dead sometimes if you wait 1 or 2 minutes then it'll start right up. I also had to watch a you tube video in the beginning because I wasn't do it correctly, after that I've started about 7 other cars with it as well as a diesel truck

Question 2

How long does the charge for the jumper last.  dead batteries are few and far in between.  If i were to charge it will it last a year, 2 years?

Mine lasted 6 years, in fairness it did not get charged up periodically. I bought it in 2016, it now won’t take a charge anymore. 
But, I used it 7 or 8 times in those 6 years (Vintage cars) and it saved my butt each time. 
For $100 I feel like that’s a fair trade.  It lasted about as long as I expected. I will probably buy another

What is the operating temperature range? Can it be safely left in the hot car in the middle of summer (180 degrees or more)?

The people saying this can be stored up to 180°F are wrong. The manual specifically states storage temperature range of 120°F max with a daily avg of 0-77°F. Max operating temp is 120°F, "NEVER operate above this temperature."  There is a warning to never exceed 180°F, this is the temperature at which the battery could explode.  These are NOT meant to be stored in a hot vehicle.  You may get away with it,  or not.
