Good knife, worth the money. Holds a good edge. Just make sure you don't let it get dull. Keep it sharp.

I'm asian and have to process and butcher a lot of cows, buffaloes, and pigs. The knife is sharp out of the box, but I put my own edge on and the edge holds pretty well. When it does start to dull, all it takes is a couple runs on a steel honing rod and it's sharp as a razor again.

I ordered this knife when I absolutely didn't need it. Every knife I own manufactured by Mercer are of high quality. Their bread knives do exactly what they say. They cut the softest loaves of bread with ease without crushing the bread. This knife is a very good knife and I highly recommend it.

I use this for skinning cows and pigs. Very durable, sharp, and the shape of the curve is perfect to roll a long even cut. Great quality.
