I did add some sumac, but the overall flavour was definitely there. Not too minty or salty, as I feared it might be. Would grill well in a block under a high heat, shaving off slices and keeping them warm under the grill, whilst the rest browns. Would also work well with beef. Grind the mince though. And go for a high fat content. Well worth trying.
