Review: Excellent butchery tool - Very sharp out of the package but mine came a weee bit toothy from the factory. Tiny bit of burr on the cutting edge. A few passes over a 1000 grit stone and a strop and it fell through a large rib roast with a single push and pull. Perfect cuts -- flat, lovely steaks fall off the roast one by one. I love it. It's one of the 6 knives with a permanent spot on the magnet by my cutting board. If you're looking for a great chef knife, grab the 8" from this very product line. It's my best friend in the kitchen.

I work as a meat cutter, spending many hours breaking down and portioning primals. This 8" mercer bpx breaking knife is a favorite of mine. The hard steel keeps and edge well at 15 deg. The handle is very comfortable for long use. I prefer the Mercer handles to most other knives (F. Dick ergogrip are very comfortable and durable as well). I also use the Mercer bpx 10" breaking knife, Mercer bpx 10" American style granton Butcher Knife, and several Mercer boning knives. Mercer offers great value comparatively.
