How do I know what fabric each needle is suitable for?

The smaller the number the lighter the fabric it’s for; the higher the number the thicker material it can handle. You want a thinner needle for light fabrics so that it makes a small hole ; the thicker the needle the bigger the hole , which thick fabric needs.

Is this good for strechy material?

These are for non-stretch material. For stretchy I would buy specialist needles for stretchy materials so the needle goes between the weave instead of puncturing it. That said, I haven’t tried these for stretchy - there’s no need when a more suitable product exists! Hope that helps.

Do these needles have a flat side on the shank ?

Hello, one side of the needle is a little rounder and the other side is a little flat.
