Anytime I heat a pot of oil for deep-frying, or use a saucier to reduce braising liquid into a thick sweet glaze, or if I use my griddles for things like making Lebanese mountain bread, homemade tortillas, quesadillas, pancakes, fermented dosa crepes, pressed sandwiches (paninis & tortas), burgers, steaks, bacon, blackened fish, eggs, et al., the Etekcity 800 is incredibly handy for rapidly spot-checking the temperature status of your griddle (so you can finesse it accordingly), and also finding any patterns of uneven heating that occur in your setup {TIP: CI is a poor thermal conductor, therefore the slower you heat it, the more evenly it heats}. Different foods like different temperatures too. For example, I like to work at around 500-550F when searing off freshly stretched mountain bread (see photo), which is very thin, and prone to overcooking if your griddle/plancha is too hot. Things like crepes and dosas are even more temperature sensitive, and a thermal gun is indispensable for helping you to stay in the ideal temp range, for significantly better results and less food waste.
