Has anyone figured out how to make this the right texture to use a piping tool with? I'm trying to put swirls on my cupcakes and it just melts apart.

Try not to use as much water and see how that works. It goes on somewhat silky, but will harden once it air dries. I decorated a cake, so I'm not 100% sure about cupcakes. Hope it turned out okay!

Can this be spread and piped on dog cakes like regular frosting buttercream etc for humans?

Yes. You can add less water and it is thick or more water and make it thin. Kinda like royal icing.

Will this dry sufficiently hard to keep a ginerbread house together?

This is for dog treats, so don't know if it would work on a gingerbread but it does dry hard.
