Item header says "S.S." which should mean stainless, but the material listed in the specs is "carbon steel".** A: It's "both". The metal is "DexSteel" which is a proprietary high-carbon/stainless steel metal standard in their SaniSafe line. Anecdotally, I've never seen rust spots on it and it does fine in the dishwasher. This is compared to the traditional Dexter alligator scraper I have, with does oxidize and has shown some rust spots when not wiped dry in time. That blade just says "high carbon steel". **Q: How thick is the steel?** A: For a spatula, it's rather thick, perhaps 14 or 16 gauge steel, I'm not really sure. Its definitely better than any other spatula I've tried for burger smashing and flipping and its large size makes it good for fish and other meats that need a deft touch to flip and tend to fall apart with smaller spatulas.
