Can it handle sweet potatoes being cut into fries?

Organic  Jewle and Garnets  cut easier as there higher in sugar  less fibrous and  easier  to cut with a knife  Besides they taste SO MUCH better  than regular  fibrous  stringy supermarket and  conventional  ones
If that doesn't  work  nuke 30 or so seconds a piece test it if difficult  stop nuke a bit more If you don't use a microwave boil a big pot of water boil each one at a time 30- 60 seconds dunk it cold water to stop cooking
Also peel.them first the skins tough and  hard to even peel.off
Buy straight  not bulbous ones slice ends  off flat you can.cook those as is too no need to waste 
Remember  that  these are not built really to cut Sweets yams  there for softer white varieties  and blue yellow red skinned 
And softer  vegetables Eggplants good zucchini  carrots might need pretrial  as you'll have to buy large  wider ones 
Then soak all potatoes in cold water swish around every few minutes  change water to wash off gluey starch  set in fridge if warm they can ferment  finally dry well
If frying in oil black in hot oil in batches till light  but not cooked all the way remove to  drain on paper towels paper brown bags and let get cold do a whole batch  you can.put in fridge chill them Rrheat oil then retry  till golden  brown drain put in 200 degrees oven to keep warm  till all fried don't over crowd pot don't over FIL pot pan with oil! You should have the best crunchy golden fluffy inside fries  with the double fry method 
4 fry ovens toss with a little oil herbs fresh are best added  when done they'll burn b4 when half done shake n continue till done and as dark  as  you like watching carefully
Toss with fresh chopped herbs fresh ground black ⚫ pepper  n salt serve immediately

With the cutter fully opened it measures approx. 6 1/2" from back of the cutting blade to front of the pusher block..

Is this easily set up and used with 1 hand, like for a stroke victim with 1 strong arm/hand??

It works really well the suction cups hold it to a surface so you can easily use it with one hand, but it still takes some force to push the potato thru..But then the trick is to remove it. The suctions cups really really hold it down, its tough with 2 hands to get it off the counter due to the suction.

The product will take anything up to the diameter of the cutter area, approximately 3.5" wide. You can go up to 5-6" long, which is the opening of the potato resting area with the handle all the way up. Keep Physics in mind if you're after loooong fries...the higher the handle, the more effort needed to push the potato through the cutter -- It works great! Made 4 lbs of fries on Christmas Day, yummy!!
