I just let it cook gently until it looks at least halfway set. That is when I place the pan in the oven for the top to finish. It takes something like eight minutes but keep an eye on it. You don’t want it to dry out fully. This is great hot, room temperature or cold. And slices last a good week in the refrigerator in an airtight container.
