Do you have pressure drop at different flow rates for this unit? also, btu's exchanged at different flow rates?

no problem run two showers up stairs and down and dishwasher at same time had to run mixing valve it was to hot heating with out door furnace set temp at 175 to 185

Can I gravity feed beer wart through it, or is pump pressure required?

You will want a pump to supply flow. Depending how cold your supply water is you sometimes want to recirculate your wort in your kettle. I have seen mine drop 150deg Fahrenheit in under 5min with a recirculation back to my kettle.
