Will this cut thawed boneless skinless chicken breast into 1to 2 inch pieces for canning?

Yes, at first I would say no. I had my blades sharpened by a professional and it made all the difference. The unit now cuts like I expected it to when I bought it. If you get it, I would have the knives sharpened before I started to use it. You will save yourself a lot of frustration.
