What is written on the product is the date of manufacture. The expiration date is 3 years from the date of manufacture.

Are all the ingredients listed on the package? Is it just the root?

Most of the writing on the package is in Korean, which I do not understand, but there is a label that says 600g Lotus root, with no additional ingredients listed. I believe that the contents are pure lotus root.

The lotus root doesn't appear to have been peeled. Is the shin edible?
