How accurate is this product when compared to, say, a fluke 985?

I've never used the fluke, but seeing as how it looks like a professional device, I'd say that this device will not give you as accurate a calculation on particulates. It has basically a 1-5 scale for particulates, and only measures pm 2.5 particles. Plus a separate scale for VOCs. I've been using mine for about 2 weeks and see it drop down from an overall score of 100 to about 65 when I cook, but I bought it to detect fumes from my neighbor's cooking, and even though I could clearly smell their smoke, my awair was still registering at a 95, so it didn't really do what I had hoped.

Will this detect leaking gas from a stove or heating unit?

No > You need a Carbon Monoxide detector for that. < That is a safety device you should have just like a smoke detector. Carbon Monoxide (from faulty stoves or furnace) is much more dangerous at lower ppm. What you get with this air quality monitor is readout on carbon Dioxide, which humans breathe out (and generally is not harmful in low parts per million, but when a house is tight / lots of people together it starts to get stuffy and signals need to open window for fresh air, etc). House Plants can also help process that co2 into oxygen.

Will it detect formaldehyde？

No, it detects VOCs in general, nothing specific. You will need an air monitor specific to formaldehyde.
