If a kitchen tool can be loved, I love this one! With an optional oval-shaped plastic bowl, it is the salad-maker supreme - not just effective and speedy but exhilarating to use. The bold red color helps, but performance is what I’m talking about. Convenience is great too. This design combines the advantages of on-board and separate housing of tools by having the tool case attach to the underside of the body. Then everything just fits in the bowl. True, this unit can’t manage crinkle or waffle cuts because the V-blade isn’t interchangeable, but I didn’t mind buying another small Borner mandoline for that special purpose - not expensive and really just as convenient as changing blades. Strange to say, my main machine has a production flaw. Molded-in graphics indicate that the thick-slicing julienne blade can make square dices. Unlike the thin-slicing julienne blade, however, the thick-slicer won’t adjust to the indicated dicing position (so, no dice!). I have heard of Borner introducing an updated model that won’t disappoint in that way but still have all the old virtues. Mine is from 2013. Oh, well. Lots of little machines can dice vegetables! UPDATE: How amazing! - after four years of thinking that my large-julienne cutter wouldn’t and couldn’t make diced vegetables, I have stumbled on how to make it work. In case anyone else needs help, here’s how: you know that you want to move the julienne assembly upward and inward toward the V-blades, according to the molded index point for dicing. But you must start (counter-intuitively) by pushing firmly DOWNWARD on its opposite end (nearest the handle, farthest from the blades); this allows a small, hidden plastic pin to move down and underneath a barrier and onto a plastic ramp that guides the whole assembly exactly to where it needs to go. What results is the promised dicing action.

A wonderful kitchen tool that will last you a lifetime.
I bought the V-1001 model in March of 2009, and still have it since I also bough the waffle cutting blade for it. I bought this V-7000 model because of the available thickness options. The V-1001 has the same blades as this one, but only one thickness is available for each of the julienne blades, and 2 thickness are available for slicing by turning the plate one way or the other. On the V-7000 model, you can choose between 4 thicknesses for slicing and the julienne blades. I bought this mandoline In July of 2012 five years ago, and so far, I have had no problems with it. Yes, you do have to make sure that it is clicked into the thickness you choose, but this hasn't been a problem for me. I tend to use this mandoline more than the V-1001 because of the thickness choices. After 5 years of use, the blades are as sharp as they were when it was new, and I have not had any parts break off of it. I also like that the part that stays in it for slicing closes up so that you can't get cut on the blade. I do only hand wash it which is simply slishing it in soapy water and rinsing it. I towel dry the blades and as much of the base as I can, and then let the rest air dry. Granted, I don't use it for all cutting jobs since just using a knife makes more sense and takes less time depending on the job. I usually use the mandoline when I have a lot to slice or process. This is a very useful tool that will last you a lifetime unless you decide to buy a new model with more options.

Works Just Fine!
I bought a OXO Good Grips Mandoline at BB&B and could not use it at all. It would not slice anything I tried (thus resulting in the most cruel review I have ever given any product.) The Swissmar Borner is not fancy but it works. I have used it to cut tomatoes - excellent. Sweet potatoes - a breeze. Mushrooms - flawless. Apples, pears, oranges and lemons - perfect! I have used it for many other fruits and vegetables, too, all with ease and precision. The weaknesses - the julienne sizes are too small. Other reviewers stated the same so I was aware of this at purchase time but it is still worth noting. If you intend to make fries or wedges from your vegetables, be prepared to continue using your favorite knife unless you want ultra-slim fries. For me, I do not like the slim cuts because they do not cook up right - thicker is better. Another MAJOR weakness, and almost resulting in a loss of two or more stars, is that this Mandoline does not have legs to raise up the device to allow food to flow out easily and it can easily slide on you. These are significant issues but both can be overcome. I just have to remember to regularly stop, remove the foods from under the mandoline, and then continue. My previous Swissmar could be mounted over a large mixing bowl allowing for all the food to fall nicely in without my having to stop at all. It cleans up easily. The blades are not replaceable or able to be sharpened, as several reviewers have noted and complained, but at this price, I am okay with this weakness. After using it for several major cooking projects, I decide to give the Swissmar four stars. If it had legs or was raised up just a bit more AND it had a better julienne feature, this tool would definitely have five stars. Would I recommend it? YES. Would I give it as a gift? YES. Why? Because it does its job and it does cut. I can live with the weaknesses because overall this tool will save me a lot of time in the kitchen.

Sharp and efficient
I have been considering buying a mandoline for quite a while. After doing research, I settled on this mandoline. I decided on a colored one because I read the white one can get discolored due to the vegetables sliced on it (i.e. carrots, beets). I like the safety features (but I did buy a cut resistant glove) just to be on the safe side. Parts are easy to change. Just be careful when you wash it because of the sharp blade. Vegetables were sliced cleanly, evenly, and quickly. Worth the little extra money to buy a quality product. Very pleased with this purchase.

Highly recommended
I bought a Swissmar Borner V Slicer over 25 years ago, used it thousands of times and threw it in the dishwasher everytime. Just recently it formed a tiny crack so I replaced it with this - which is almost the same design but with more options. There are no height or thickness dials to loosen or strip out (which happened on other Mandolines I tried). This one has a clever notch design to adjust thickness. It is sturdy, easy to use, blade is very sharp. I'm looking forward to another 20+ years with this slicer! I note cleaning in the dishwasher is not recommended, but it is easy to hand wash - no little crevices for scraps to get caught up in.

Awkward to use cheap plastic fittings…
I had to study the situation and watch videos on YouTube. Then spent more than an hour figuring out how it fit together. Because it does not slip easily together or in and out, not as easily as it appears in videos. The release button is in an awkward place. Perhaps if your fingers are much longer than mine it would work better?? It is also difficult to identify which model you should buy, the latest model or which model you have received. I very much want it to work so will continue to work with it for 25 days. I am however not impressed with the construction of the product. I am familiar with products that have little plastic fittings that require much effort to fit together and I have mastered some of them. So, I’m still hoping. I expected more from a German made product. I returned it.
