After watching Salt, Fat, Acid, Heat, we wanted to try the oil that was featured in the show. This is the one, and it's great! I like it as a finishing oil on a pasta dish, or on pan fried toast. It's also great for dipping bread. It has a lighter flavor and is very smooth.

We started using this olive oil after seeing Samin Nosrat’s excellent “Salt Fat Acid Heat.” It ups the quality of both our everyday cooking and special dishes. Sweet up front with a nice little pungency on the back end. Large bottle & superb value.

Best in my experience
I have used primarily for uncooked food so far - salads, cold vegetables. It is definitely the best I’ve ever used. Plan to make my own pesto next. A little expensive for me to use in most cooked foods. I was a trained and professional chef for part of my life. I am so enthralled, I will be trying more ROI from Italy.
