What is the smoker capability like? & how does one go about it (bar shutting lid?)

It can be used as a smoker but I found regulating the temperature for a low and slow cook quite difficult, you will need to get some gasket sealant tape for the lid as quite a bit if smoke can escape without it. Use the snake method (check youtube) and indirect cooking and you will smash it. Remember if you are looking then you ain't cooking! :) For grilling it's amazing.

Can you adjust the grill height/level?

Yes, you can adjust the height level. There are six different levels to choose from with a simple movement of the handle up and down select 1 to 6 for different heat , of cooking you could not buy a better charcoal barbecue .

Whet size foil trays fit in to both levels?

As far as a foil tray is concerned, there is only one level which is on the bars on the surface of the bars as it’s only the Coles which move up and down the charcoal cause the bars stay stationary in one place so that Tracey can be the full size of the bars if needed
