Franz Keto Bread (and Buns) review
I'm not sure what to say about this bread, or where to begin. I guess, first - is it Keto? I think - probably not. My guess is that it might be best described as Low-Carb (which some say is actually better than Keto), or Zero-Net-Carb, or maybe Keto-friendly, but this bread could certainly be a part of a Keto diet. As I understand the definition of Keto, it's a diet that's 70% - 80% fat, 10% - 20% protein, and 5% - 10% carbs. And the percentages are important because one of the central tenets of Keto is that most of the calories must come from fat. Does this bread have that amount of fat? I don't think so. But fat could be added to it by, say, having an avocado sandwich, as one example.What about the wheat content? The first ingredient is listed as "bread base (modified wheat starch, wheat gluten, inulin or chicory fiber, oat fiber, and wheat protein isolate)". After that, the list continues as "water and soybean oil", and then it's the <2% stuff. It contains 40 calories and 95 mg (4%) of sodium per slice. Seriously, this info should be listed, and prominently, so we can make an informed decision.So - is wheat starch better or worse or the same as wheat flour? I don't know. I can't find any opinions on the matter. All I found is that wheat starch is generally used as a thickener, as in sauces and gravies. But I will say this: I have arthritis in my back and I had to give up wheat because it aggravated and inflamed my back so bad, I literally couldn't get out of bed. I don't know why wheat does this to me, but I've eaten one loaf of this bread and so far, with no back pain at all. I've also eaten the buns, with the same result. This bread (and the buns) are way expensive, but I think they're worth the money, and can become a regular part of my diet.They taste as light as air - lighter than any White bread - but don't crumble, like so many breads do. They have a nice elasticity. I also eat sourdough bread (because it's fermented, and that's a good thing) and sometimes, that's the tastiest bread to use. I'm currently trying Ezekiel again (also an expensive bread) because sometimes, I want a chewy, textured mouthfeel, like with a cucumber and tomato sandwich or a melted cheese and onion sandwich.Last thought: I've been trying Keto for about 2 months now. I read that in the first week or so, I could expect to lose a lot of weight right away due to water weight loss (I lost 16 lbs in 2 weeks), and that after that, Keto acts just like any other diet. And that's been my experience. The key to weight loss, even with Keto, is still "eat less and exercise more". And the key to Keto is satiety, and that's where the fat comes in - it makes you feel full (so you presumably will eat less - but you still have to do the work and watch the calories) and even though fats have a lot of calories, they make you feel full sooner and digest slower, as opposed to carbs, which are digested quickly, turned into sugar (glucose) quickly, and stored as fat. So you get a sugar spike, an energy boost and bust, and then you're hungry again. Is Keto the best diet plan? It's the only one I've had ANY success with, but lately, I've been reading a lot about the Resistant Starch Diet (RS), and I've been trying it for 3 weeks now. The key to that diet is: if you take a high-carb food, like potatoes, rice, bread or pasta, cook it and then cool it in the fridge for about 6 hours (also, check out Overnight Oats), the carbs turn into a fiber-like substance that feeds the good gut bacteria and makes starchy foods actually healthy (boosts your immune system and fights chronic inflammation) - in the same way that Fiber does, and you need at least 35 grams of that per day (while the average American gets about 5g/day). Is it better than Keto? I don't know. I've been trying it (and Keto) for about three weeks now and I feel healthier, but my weight loss is very slow - maybe .1 pounds per day, on average. But then, I'm not a perfectly disciplined dieter. For example, I still eat Keto ice cream (key feature I look for there is MCT Oil and Stevia sweetener), which is maybe questionable.The bottom line: Would I buy this bread again? Yes. But I'll also buy (and freeze) Sourdough and Sprouted Bread (like Ezekiel, which has no wheat flour). A lot of this review was written for newbies who are curious about Keto or RS, and to add my thoughts to the debate I've been reading in the other reviews. It's a good debate, and thought-provoking.BTW - the bread is listed as from Portland, OR.

It actually does feel, taste, and toast like bread!
Alright, I have tried quite a few keto-friendly baked goods. Generally, they only kind of resemble the items they are supposed to replace. However, this bread is very much bread (!!!). It is the most expensive bread I have ever invested in. That said, I have been eating sandwiches with wild abandon and great delight, and I have not exhibited any signs of exiting ketosis. I was a little worried about whether this was really going to be keto-compatible when I saw some of the disgruntled reviews for this product. For me, this bread has been absolutely keto-friendly. It is definitely not a good fit for anyone who is living gluten-free, wheat-free, grain-free, or bread-free. Because it is bread, and it contains wheat. In terms of the packaging, you might think. "My lands, 3 loaves is a lot of bread!" I was initially not a fan of the fact that it comes in a 3-pack because I had concerns I wouldn't like it or that it would spoil, etc. I quickly discovered that (at least in our household), 3 loaves is somehow not an unreasonable amount of bread. Also, the company conveniently packaged it so that one loaf is in its own single bag (for eating right away), and the other two loaves are individually bagged and in a separate double bag for easy freezing. I did the freezer experiment, and the 2 frozen loaves defrosted fabulously without any extra preparation or fuss. Overall, I've had a great experience with this product and plan to purchase it again.

Gets the job done. But price went up since I first bought this.
Tasted ok. A little 'meh'. But once toasted and eaten together with something else like a sandwich, with runny eggs, etc., it's much better. After a few bites, I forgot that it wasn't regular bread. It's the #1 player in my success with keto this time around. Works for me! Price went up though. It was around $30, now it's $38. So I'll be looking at other brands with good prices and trying those out too (as long as they're also 0g net carbs like this one.)Edit: March 5, 2021I think I will stick with this product. The company has integrity, in my opinion. So far, this has been my second order. We had some pretty extreme weather here in TX not too long ago, and I was concerned about shipping times and how fresh it was going to arrive. Although the company did their part to ship it out promptly, it was really out of their hands after that, but they gracefully and immediately, without question sent me a refund for my order, although it wasn't really their fault. That cemented my trust in them, and I believe that is worth the little bit of extra money. Plus, it IS only ZERO net carbs, just that in itself is worth the price, and we know how quickly a few carbs can add up, so it's really 100% guilt free sandwiches! Also, as I've mentioned before, the taste is still fine when paired with other foods.

Good texture
Decent low carb bread has been difficult to find, but this one is pretty good for French toast and sandwiches. It comes at a stiff price, but it’s better than going w/o!

Well I was hoping for more than the typical cardboard texture based on the description. However, it was pretty much like cardboard. My husband asked for a bite once it had been toasted, and it fell apart in 3-4 pieces. I joked that he had broken my toast... anyway haven’t used in a sandwich yet so cannot rate that. Texture was much like eating a thin piece of cardboard. The taste seems to be fine to be fair. I bought a 3 pack, which was fairly pricy but thought it would be worth the cost. Will I finish the 3 pack? Yes. Will I order again? No. I will try making a keto bread recipe that uses almond flour. In fairness, there are only so many things you can do to make bread/wheat products low carb.Edit: so now after eating on a sandwich, it seemed much like regular bread so I would have to amend the review somewhat. It just isn’t good for toasting.
