Wonderful cookbook! Will use again and again
I have more or less retired my stove, as I use my electric pressure cooker multiple times a week and find that it makes excellent tasting ethnic food, particularly cuisines that typically rely on slow cooking like Indian, Ethiopian and Mexican. In a sea of InstantPot recipes and cookbooks with a focus on family American dishes like Mississippi roast, pulled pork and beef stews, it can be difficult to find authentic and tasty international recipes.I found this cookbook and ordered based on reviews alone. I live in an area with very little Filipino food and my partner was raised on the stuff so it’s frequently requested but not the easiest to find. I’ve been making a simple chicken adobo recipe in the IP for a few years which is passable, but doesn’t hold a candle to the real thing. I received it a few day's ago and have already made pancit canton and chicken adobo - finally I am able to get the right flavors thanks to these recipes and recommendations. Despite the lack of a Filipino population in my area, the recommended brands of soy sauce, vinegar and fish sauce (Datu Puti and Silver Swan) were available my neighborhood grocery store that features a robust Asian section.Do note, these are authentic Pinoy recipes written with a Pinoy pallet in mind. Many recipes go heavy on bagoong (fermented shrimp paste) and patis (the Filipino version of fish sauce that is very different from Thai) which may be a bit surprising to the unaccustomed eaters - and also features recipes for things like dinuguan aka “chocolate meat”, a stew made with pork blood. However, this is exactly what I was looking for!

Anyone Can Cook Filipino Food!
I have had the book about week now and I have successfully made 4 delicious recipes from this cookbook - Kare Kare, Mechadong Baca, Pancit Moto and Chicken Adobo. The instructions are easy to follow. My Instant Pot is 10 years old and still going strong. I've posted pics on FB and my mom has been impressed that I've made that many Filipino recipes in one week. My mom's recipes are often labor intensive and the Instant Pot has been a game-changer for these classic Filipino recipes.I've loved the book so much that I've ordered them for my friends and family members. Some have ordered them on their own after seeing my mouth-watering photos on Facebook! I am proud to be Filipina-American and this cookbook has made my childhood comfort foods come to life and become recipes I cook on a regular basis, and not just when I visit my mom in California.Some of the ingredients (vegetables) are hard to find in Charlotte, NC but I've been able to substitute other ingredients easily. I'm looking forward to trying desserts next!Thank you to all the authors who shared their family's recipes to create a cookbook that will be used regularly.

Mostly good, very nostalgic.
This book was good-- a lot of the recipes were nostalgic for me-- the Tapa recipe for instance, brought back memories of my grandmother. I did find that the water ratios are a bit off. In a lot of the recipes thats supposed to have a sauce, the author has too much water, and rather than a sauce you have a soupy consistency.

Experience the Philippines at home!
Our family enjoyed a trip to the Philippines last year, and one of the things we missed the most was the food. Growing up in the US, my Filipino parents already taught me to make savory dishes like chicken adobo and sinampalukan, but I wanted to learn to make desserts my parents never taught me. The Filipino InstantPot Cookbook pretty much covers all my favorites from savory to sweet. Every recipe my husband (who’s not Filipino) and I have tried so far have turned out amazing. We had to do a few minor tweaks like add around 5 more minutes to cook the cheesecake, but overall we were satisfied with our results. One recipe I found way easier than I expected was puto—and it’s very quick to make and so tasty I can make this every day (but we shouldn’t LOL)! We also used the recipes to make savory dishes like chicken afritada and curry chicken—both were delicious. Although we haven’t been able to go out much due to the COVID-19 pandemic, we’ve enjoyed our culinary adventures with this cookbook at home.

LOVE THIS RECIPE BOOK!
My mom cooks her Filipino dishes simply by taste and doesn't use measuring cups or recipe books. I didn't inherit her cooking gene and my kids have suffered because of it. When I learned about the Filipino Instant Pot Cookbook, I purchased the book and an instant pot hoping it could help my cause. So far so good! I'm so HAPPY with all the dishes I've cooked so far. I opened the book for the first time two days ago and have already cooked three dishes; Arroz Caldo, Adobong Manok, and Pinoy Chicken Curry. The recipes are quick and VERY easy to follow. But most importantly, my teenage kids and husband, who are all very picky eaters, enjoyed all three dishes. I'm so thrilled that I can finally cook the many Filipino dishes that my mom cooked for me for them and I'm also grateful to be able to reconnect with my culture. Many thanks to the authors for putting this together. It has a special place in my kitchen! Maraming Salamat!
