Ingredient of this soy sauce is hydrolyzed soy protein. **Q: Can you please tape the caps on and put in its own box for shipping?? Second time now I have gotten damaged wet Amazon boxes from poor shipments.** A: My cap on the 1-gallon jug was taped on as received. However, the first one I ordered was damaged in transit (I therefore never received it). It most likely leaked due to aggressively handling. The LaChoy 15 oz. bottles on the other hand are EACH wrapped in bubble wrap, the pair of bottles are then sealed in its own box and shipped inside an Amazon box. I've never had an issue with any of those being damaged. The caps on the bottles have a red plastic seals to ensure the caps will not loosen in addition to providing security. **Q: Is the current expiration date really in 2021?** A: I purchased mine in January 2021. It has an expiration date of 10/22. There is nothing wrong wIth it so I intend to continue using it. I am sure that with the high sodium content it will last a long time. **Q: Do the gallon need to be refrigerated after opening?** A: I'm going to say, yes. I tried to find that on the gallon jug but, there is a bar code sticker applied almost completely over what appears to be "Refrigerate After Opening" on the La Choy label. This sticker by the way would not come off without tearing the La Choy label. I'm just waiting for enough empty 15 oz. bottles to completely use the 1-gallon jug.
