But unless you grow it, dry it, buying the American sambuccus which doesn’t have the toxin, was 4 times the cost. So, after reading the heat requirements to inactivate the toxin, I felt comfortable making a new batch of syrup. All dried elderberries have a bitter taste upon hydration, (I use 3 C water per 1 C berries) but cooking with turmeric, cloves, cinnamon, ginger root, adds a great smell and taste and of course, adding wild honey for sweetness makes all the difference… one bag, hydrated, makes about 9 pints of great tasting elder syrup, which I seal up and store. I’ve tried rehydrating in both stove top and insta pot methods. I use 2 tbsp per day to thwart colds, sore throats., etc. It’s a wild tasting liquid syrup, but I like it that way.
