We have used it in various ways: Mac and cheese and sprinkled on popcorn/broccoli/potatoes. My kids particularly like it because they can control the “cheesiness” of their food. The flavor is rich and smooth. I would recommend if you use to make a “sauce” such as for making mac and cheese, I would either add a little warm milk or pasta water to help the powder dissolve so it does not become clumpy. For storage, you can just keep in the container it comes in but keep in mind every time the container is opened it is introducing moisture into it and over time the cheese can become a little clumpy. The clumpy texture does not seem to affect taste at all but may just look more like slightly wet sand after a while. If you are able to keep in a more airtight container this may help with this. Overall, I this is an excellent product that my family enjoys and I have purchased multiple times.

**Q: It seems like the most recent reviews are regularly severely negative--did they change something??**
A: If you read through the reviews, it appears as though Hoosier Hill has some kind of quality control problem.  There are lots of reports of rancid smelling/tasting product over the past few years.  I've ordered it 16 times and two of my last three containers were rancid.

The fact that the company doesn't allow refunds on bad product is perhaps the most telling signal that something's wrong.  I've switched to a different brand.

**Q: Is there any nutritional info on this?  I.E. fat & sodium content, etc.**
A: Serving size 15 g, Calorie 70, Fat 37 g, Cholest 8.67 g, Carbs 6.2 g, Sodium 541 g. and sugar 4.61g. The cheese is wonderful on popcorn, it also contains Vitamins A & C along with Iron and Calcium.

**Q: After opening the cheese jar, do I need to refrigerate or what's the best to store? thanks!**
A: Refrigeration causes way more clumping. I would just put it in a sealed jar (plastic lids never do as good of a job

**Q: Is this gluten free?**
A: It depends on your sensitivity. It does say that it is made in the same facility as wheat products. My wife has a gluten intolerance (and her sister has celiacs...honestly, my wife probably does as well, but didn't want to go through all of the testing) and there is no WAY she's going to try this stuff...but I am =-)

Where it works best is with foods that already have some moisture. The powder mixes in easily and effectively turns into a cheese-like coating or sauce. It’s especially useful for vegetables that tend to hold extra water, since it absorbs that moisture rather than making the texture soggier like melted cheese can. The flavor is rich and satisfying, and I often prefer using a slightly heavier amount for a stronger cheese taste. One important limitation is that it doesn’t work well on dry foods by itself. It won’t stick if you try to sprinkle it on something like popcorn unless you add moisture separately. It works better when combined with water rather than acting as a dry seasoning. Nutritionally, it’s about what you’d expect from a cheese powder. It's not quite the same as real cheese, but that’s typical for this type of product.
