Will this work with the Pilot Metropolitan fountain pen?

It works perfectly even with the original refillable cartridge that came attached to the pen already. However, since the cartridge is not see-through then having a Con40 cartridge might be of interest to you.

What is the difference between "Mystery Black" and "Permanent Black" (both by Montblanc) ?

If you zoom in on the product photos, “Mystery Black” has a slightly purplish tint to it, side by side with the more colorless Permanent Black. Once you fill a page with writing, or if you are writing on the same page next to someone else’s pen scrawls, the difference gives Mystery Black a bit of uniqueness… but it’s subtle enough that both would look pure black in an incandescent (warm white) light. If water or rain are a concern, the mystery black is water soluble, while permanent ink doesn’t dissolve in water… it dissolves in alcohol (like a Sharpie).

Keep the cap on the bottle tight when not in use and it should last for decades. You will use it up or drop the bottle before it goes "bad". What is bad? Keep the ink in your pen fresh. Rinse your pen several times with warm, clean water when you get ready to refill. Keeping your pen filled and clean is far more important.
