Yes as long as moss is completely dry can be stored indefinitely.

Is this safe for crested geckos?

I can't speak for Geckos. Can tell you have sold for use in pet applications. This Sphagnum is compressed. needs to be hydrated before use.

This picture is confusing, it shows 4 different sizes but no option to buy different sizes..what gives?

Picture is misleading. Stock photo showing 3 sizes. What you get is what quart size you're paying for (whatever single package it is). You don't get "all three." The advertiser or manufacturer "saves money" by showing the various size packages.
