Q: Can you open the lid while it is operating to check consistency, if more liquid is needed?

The lid of the BBM800XL Custom Loaf can be opened while in operation but it is not recommended. There is a button on the control panel that will turn on a light inside the bread making chamber while the button is being pressed down. This will allow you to look in on the loaf throughout the entire process to check and see if any additions are needed and to see the progress of the loaf.

Q: Does it use water to create a nice crust?

Yes, you can brush with water or egg. The machine beeps to signal each phase. If you time it correctly you can brush the crust or add oats, cheese, seeds...etc.

Q: Are there YEAST FREE recipes as well?

There are gluten free recipes and yeast free recipes included in the instruction book for the BBM800XL Custom Loaf Bread Maker.

Q: What is the capacity of the fruit/nut dispenser? Our raisin bread recipe for a 2 lb loaf calls for 1 cup. Will 1 cup of raisins fit?

I have never added ingredients through the dispenser but the instruction manual says the most you can add is 3/4 of a cup of any nut or fruit. Hope this helps.
