Yes it will freeze. But just leave it on the counter and allow to thaw. Shake well before using.

Do you season carbon steel at the same temperature and times as cast iron?

Yes, the instructions are the same for cast iron and carbon steel.

What's the difference between the cream vs the stik or puck?

The Crisbee Cream Iron is made with non-GMO sunflower oil and beeswax. It's a more liquid formula. The Crisbee Puck and Stik are made with soybean oil, beeswax and palm oil and are solid at room temperature. You'll yield the same great results with any of the Crisbee seasoning products. Just different methods of application.

Will this product help clean rust & oxidation off older cast iron cookware?

No, it is only for seasoning cast iron. My suggestion is to put your pan upside down in an over capable of self cleaning. Do a self clean and your pan will come out like the day it was born. Wash the pan and check for rust. Use steel wool or a scrubby to get the rust off. Cover your pan with a light coating of this cream and put in the oven upside down at 425 for 1.5 hours. Let it cool in the oven. You might need to repeat the coating several times to get the finish you want
