I have used mine now for a couple of years and see no signs of the anti stick coating wearing off. Hope this helps. But if you want a pan with no aluminum, this is not the one for you. I have not found this pan in a silicone though. **Q: How to prevent the coating from peeling off?** A: I haven't had that issue. I think if used as intended and washed with care with soap and warm water it should last a really long time. It is very easy to hand wash **Q: Does the size works well for the Japanese milk bread recipe (620g loaf)?** A: I have used it for the same kind of bread but have found that I like to make a full recipe and another half. I oiled first but still stick and then came out with flakes of coating. Soo then I tried using parchment paper but where the coating came off it rusted and bled through the parchment paper. Soo after only using it 5 times I had to throw it away. I tried to reach out to the company but never received a reply. Please don’t waste your money on this. I bought a nice cast iron pan.
