Q: Are these beans freeze dried or dehydrated?

They are dehydrated. I package a quarter cup of beans with a quarter cup of freeze dried meat with a quarter cup of mixed vegetables (harmony house vegetable soup mix is great). On the trail I add a half a bouillon cube to a little over a cup of water, add my prepackaged ration, a quarter cup of instant rice and a table spoon of instant mash potatoes with cheese and bacon and let it set for 10minutes

Q: We are backpacking and do not want to cook anything but water. If you add boiling water to these and let it sit for 15 minutes, will they be soft?

It can be done, they will soften but MAY have crunchy parts and it may take more than 15 min if not simmering.

Q: What is the Shelf life

The vendor states 1-2 years shelf life, but also says they've used them 5 years on. They are dehydrated beans that have been pre-cooked and then dried. I use these in my emergency prep stash as they pair well with macaroni for a complete protein and joint cook time of about 15 minutes. Add some tomato powder, sauce, etc., and some dried peppers and spice, and you have a good hearty meal.
