One is a non-stick and looks like a Teflon type coating on it. That would not require any seasoning. In addition to non-stick plate option there are also a cast iron version which does need seasoning. It comes covered in a light coating of oil from the factory but you should wash that factory oil off thoroughly since it's there just to prevent rust. After you wash that factory oil off then you need to go through the seasoning process. The 3rd option is a cast aluminum plate. The Swissmar grill is well made. Easy to use. Heats up quickly. It's something different to do for dinner.
