Will it work with touch lamps?s

It probably would if you make sure that the lamp is on before you connect it to the wall plug side of the system and then use the remote. You could also turn it on with the remote and then on/off using the touch aspect.

Are there any lights on the plug itself? trying to avoid any other light sources in a dark room. sometimes chargers and plugs have little blue lights.

Yes, it has a very small orange light on one end that is square and about a 1/2 inch on each side. This light is not very bright at all.

Could two outlets each with a lamp plugged in turn both on and off with the same remote?

You can control up to 3 outlets with the remote in this set. I currently have two lights on different sides of the room that I control with this set, and am thinking of where to use the third smart outlet.

will this work on a 3way lamp by leaving the lamp switch on what ever brightness you want ?

I don't see why not. I don't use mine with a 3 way lamp but I have 3 way lamps on regular timers that work fine. Same concept only switch turns on with a clock instead of a button push. For me these remote switches work very well for lights in my basement.
