Our pouches are preserved by a combination of heat, the type of packaging and pH controls that are placed in succession to minimize bacterial growth. The purees are cooked to high enough temperature to kill any microbiological growth and then drops of lemon juice concentrate and/or ascorbic acid are added to lower the pH of the purees to a food safe range. Lastly, the type if packaging we use has an inner aluminum lining for vapor/moisture impermeability. Our first priority is making sure the pouches are safe for non-refrigerated storage, and in order to accomplish this, the food is cooked to accomplish commercial sterility. We take a lot of steps not to “overcook”, so as not to lose nutritional value, but the safety of the products necessitates that we cook the purees at >185 F.
