Can you use in cooking or will this kill the bacteria?

Hello. Cooking to a high temperature (46°C 115°F), as far as I know, will kill most bacteria. So you would lose the good probiotic gut biome bacteria. But putting some in at the end when the food has stopped boiling, or adding a little at a time just before you’re going to eat something, should allow you to keep the majority of the good bacteria alive. I usually put on side of plate and mix a bit in at a time. Or I out a dollop in the middle of a bowl of soup. (The kimchi is very nice mixed with salsa as a salad dressing I find. )

Is the top just supposed to come off in a turn ? I’m used to pressure packed products that you release lid with a knife 1st ?

Hi Georgina. All of our veggies are fermented and preserved, and as a result don't need vacuum sealing. You'll sometimes hear a "hiss" as any CO2 released by the bacteria escapes when you open a jar. But you won't hear a "pop" because there's no vacuum. You can open and close our jars as much as you like and it won't affect the best before date. They are really pretty stable foods. Hope this helps explain.

How long does a jar in the fridge keep once opened?

Our jars can last many weeks, sometimes months, even once opened. Take care to use clean utensils, and scrape the sides of the jar down to keep the veg under the liquid, and they can last a long time. The rule is: if they look, smell and taste OK, they're usually fine to eat.

are these supposed to be leaking when then arrive?

There can be some leakage but not always. It's ok though as always packaged really well once excess gas gas been released. Not had problems after that.
