Is it safe to plug a US power strip into this and use it in China as long as no voltage over 500?

I would say it would be safe. The thing that worries me is your assumption about the voltage. I think it is rated at 500watts and not 500volts. If you had three devices and together they consumed less than 500w, any power strip will serve to provide extra sockets to connect your devices to the transformer. Just beware the overall power to all the connected devices should not exceed 500w. I would cut it out at about 400w max. You can't load equipment to full power output and not have it heat up. Just not safe. Once again this my opinion. Please use your discretion.

can i use this in Australia?

Bought the 500 model and it worked perfect in New Zealand,also i purchased a power strip with usb charging port on it. My girlfriend used her curling iron and blow drier with no issues.
