Is there any plastic on the inside of kettle? Will it touch with the boiling water?

No plastic touching any water! I have seen nothing but stainless steel on the inside. Actually I found that the lid's handle and the kettle's handle, and the base are the plastic parts, but they won't touch the water. Whatever, it works great. My husband said that it was very fast to boil water, and I can also quickly pour over a cup of milk for myself by it every evening. I love mine.

Is the pot insulated to avoid burning by accidental touches?

It is not insulated. It is stainless steel. The bottom of the kettle does not even get warm. You can hold it up from the bottom right after heating water and its not warm but the stainless steel gets hot

Is the handle too hot to touch?

No, the handle is just a little warm while boiling. I have bought the pot for about 2 months and use it daily. It is comfortable when you hold it. I don't really have any problem now!
