No this product is not meant for the differential, this product is used for the transfer case next to the transmission. But yes it will work for your 2019 ridge line, for rear differential fluid takes dual pump fluid type 2

Is this fluid synthetic

No its maybe a semi-syn. You can use 75w-90 Syn gear oil. Holds up a little better and can be found in synthetic as well.

how many quarts is needed for a 2010 pilot transfer case fluid change?

I have a 2012- not sure it's the same. Mine took just under 1/2 a quart. Rear diff takes 3 quarts, and transmission drain/refilll (Not a flush!) takes about 4 qts.
