Organic Bean Trio (Kidney, Pinto, & Black Beans), 15 Ounce

If you love casseroles, here is a fabulous one for you.!!Cook 1/2 c. Jasmine Brown Rice in 1/1/4 c. water, stock or broth. (I add in 1/4 c white wine to boost flavor plus add a little chicken broth powder.) Cook X 30 min. and set aside.Drain and rinse this can of beans and set aside.Saute a small or med. onion in a little butter or olive oil and lastly, some minced garlic, then set aside. Now combine cooked rice, beans and onion, in a medium sized bowl, stirring gently.Now, whisk together in a separate, smaller bowl 1 cup milk, 2 eggs, 1 teaspoon Worcestershire sauce, 1 tsp. crushed tarragon leaves, and a pinch of Cayenne. I usually add 1 tsp sea salt or less, depending on your taste.Stir all together now, and lastly, stir in 1 cup grated cheddar cheese.Pour into a greased pie plate, or similar size casserole and bake at 350 degrees for 45 minutes, or until the custard is set. (I insert a knife into center and when it comes out clean it is done!)One of the most excellent casseroles you can serve, especially when you want to impress someone!! I highly recommend these beans, as they are really perfect in every way. Also, would be great in any Mexican dish!! And another tip, I usually add several good dashes of dried Spinach leaves to this casserole for extra flavor and nutrition!!)

On the downside, the liquid they come in is a bit salty, so rinsing is definitely necessary. I also found a few broken beans in the can. Overall, they’re affordable, filling, and a reliable pantry item for quick meals.
