Product Description Our spinach is farmed on organic soils in the USA. The whole leaf is harvested, washed, and frozen within just a few hours to lock in the nutrients. The ice in the frozen spinach is then slowly vaporized at cold temperatures through a small-batch freeze-drying process. Once dry, the whole spinach leaf gets ground into a powder. Nothing is added and only the water is removed. The finished powder contains the fiber, vitamins, minerals, & phyto-nutrients, found in the fresh organic spinach. It is a great way to add organic spinach to smoothies, soups, sauces, baked goods, and whatever else you can think of! LEFT - Heat-Dried Organic Spinach Powder. RIGHT - KOYAH's Organic Spinach Powder. Tips for evaluating the quality of a spinach powder Start with the color - Fresh spinach leaves are vibrant green in color due to the high amounts of chlorophyll. A high quality spinach powder should be vibrant green in color signaling that the chlorophyll molecule has not been broken down through the drying process. A powder that is pale in color has either been diluted with a filler or has been dried in a way that has broken down the chlorophyll molecule, in which case many of the other nutrients will have also been degraded. On the other end, if the powder is dark greenish/brownish, the powder has most likely been dried at a high temperature and was possibly burned during the drying process. Density - Fresh spinach leaves are light and fluffy. A high quality spinach powder should also be light and fluffy. If the powder is dense and heavy either a dense filler has been added to the powder, or the spinach has been dried in a way that has broken down the cellular structure of the leaf in which case many of the nutrients will have also been destroyed (the picture above shows our spinach powder which is light and fluffy, compared to the same weight of a heat-dried spinach powder which as you can see is much more dense). Taste and smell - If the powder doesn't taste like spinach, it has either had a filler added to it to dilute the taste, or the flavor molecules have been broken down through the drying process, in which case so have many of the other nutrients. A high quality powder should look, smell, and taste like spinach. Other things to consider - Lastly, when evaluating the quality of a powder it is important to understand how and where the product was grown. Was it grown using Organic farming practices and is it USDA Organic? Was it grown in good quality USA soil, or was it grown in highly polluted areas (such as China where heavy metals such as lead can be a major concern). **Q: where is this made?**
A: This organic spinach is grown in the USA, freeze-dried in the USA, and packaged in the USA. Hope this helps!

**Q: How can 1 scoop equal 1 cup of spinach? 1 cup has 157mg of magnesium and yet this label says 1 scoop has 6% daily value of magnesium.**
A: Great question! To equate our freeze-dried organic spinach powder to fresh, we use the numbers provided in the USDA Nutrient Database which lists 1 cup of fresh spinach weighing 30 g (91.40% of that is simply water). When we remove the water through our freeze-drying process, we are left with 2.7 g of dry spinach. Depending on where you look, the vitamin and mineral content of spinach can be very different (this could be due to many things such as testing methodology, growing conditions, soil makeup, harvest time, spinach variety, etc.). Looking again at the USDA Nutrient Database, based on 7 data points, 1 cup of raw spinach contains an average of 24 mg of Magnesium which aligns well with the 6% daily value on our label.

Also note that we are comparing to 1 cup fresh spinach and not one cup of cooked spinach. You may be referring to the amount of magnesium in 1 cup of cooked spinach which is much higher due to spinach shriveling up when it is cooked, and therefore weighing about 180 g instead of the 30 g that 1 cup of fresh weighs. **Q: Does this work well in homemade pasta dough?  or should i use fresh spinach?**
A: Yes it works very well in homemade pasta dough

**Q: Why is it grown in Turkey and not US?**
A: Great question. When we launched our Organic Spinach Powder, the only source we could find that met our quality standards was grown in Turkey. Since launching, we have been working towards producing a freeze-dried organic spinach powder that is organically grown and freeze-dried in the USA. We plan to make this change in 2-3 months and will update our label and product page once we do. Until then, the organic freeze-dried spinach powder from Turkey, is the highest quality available.

I started this off with a whole scoop when I haven't had a greens for awhile so it was a little gassy, just need to get used to it. Nice finely ground powder doesn't lump up or isn't granular, blends well. This will be my winter go to for spinach. Could be a bit better price point for my opinion, but at least it's good.
