Are these polypropylene bags or polyethylene? Also what is the plastic thickness (1mil .... 3mil ..)?

Hi there, your question is quite professional. Both polypropylene and polyethylene are suitable for making bags, the difference is that polypropylene is more fragile in low temperature, so it is not suitable for storage and freezing. Our bags are made from polyethylene and other materials. These bags can prevent freezer burn while keeping the vacuum well. Again, all our bag products are FDA approved and BPA free.

The thickness of the clear side is 3 mil and the embossed side is 11 mil. Thanks to the 10-year experience of manufacturing vacuum sealer bags, we can make these bags thin and clear while maintaining similar mechanical toughness with the 4 mil bags out there.

are these bags sealed on one end

The bags are sealed or closed on 3 sides and open on one end.  They made my packaging go very quickly since only one sealing was required.  Highly recommended!

Question 3

Looking to use for freeze dried meals for backpacking.  Are the bags strong enough to hold boiling water to reconstitute the meals?

I have used these types these type bags MANY, MANY, times when backpacking, hunting, and week-plus hikes where I make my own freeze dried foods then pour in the boiling water, stir and wait the appropriate time before eating. 
Also, I'll take Frozen foods in the bags but I'll "freeze" the meals using DRY ICE as the food will freeze "harder" and the meals will stay colder several days longer, which helps. But as with ANY frozen food, you MUST keep an eye on them to make sure they don't thaw and if they do, eat IMMEDIATELY so you don't get sick. 
If you have a small semi-rigid container you can put your frozen foods in along with a slab of dry ice, the foods will stay frozen longer plus you won't have any puddles of water as the dry ice sublimes off on your trip.
So the long story short is, yes, these bags can withstand boiling water ONCE for a meal but keep the water moving by stirring while it rehydrates and all will be good. And IF you are worried the bag will fail, place it in a pan while you stir the foods so if the bag should fail you won't spill the contents. But as I said, I never had any problems. can you boil the bag to heat up the food?

Hi Kathy, the answer is yes. The material (BPA free and FDA approved) in this bag can stand up to 212 °F (100 °C). So it's good to use it to heat up food by boiling or sous vide cooking.
