can you upgrade this car at all?

There are upgraded shocks and shafts out there. As far as motor and electronics you need to get a little creative.

Would there be interference if I purchased 2 of these?

I can't speak specifically for this car, since we have one one, but we have set up three of the other trucks we own and run them simultaneously without problem. We have the "RC Cars Dune Thunder 2.4 GHz 4WD 1/12 Scale Desert Buggy 25 Mph High Speed with LED Lights, Oil Filled Dampers Waterproof Remote Controlled All Terrain Trucks RTR with Rechargeable Battery" and they work together. We did have to be careful to power up one truck and its remote at a time to allow them to sync up before powering a second set.
