Is the knife supposed to be rust proof? I have found that I have to dry it off by hand after washing - otherwise rust immediately develops.

No, it is not completely “rust proof.” Although stainless properties are present remember the word “Stainless” (Inox) only means it will “stain Less.” Depends upon the chromium level in the metal mixture also. This knife has a lot of Carbon in it compared to others I have. mine definitely has a high carbon hardened core and is sandwiched between a layer or 2 lesser carbon steel. But yes this blade that takes an incredible wicked cutting edge needs to be rinsed off good and dried thoroughly before putting away....use a very light coat of cooking oil on blade before storing. New oil or used cooking oil. whatever ya got. wipe it off real good and put away.

Is this a good cleaver knife for cutting thin slices of raw meat?

It’s excellent. Just remember you should put the meat in your freezer for at least 30min. before cutting. Makes it a whole lot easier, plus makes for thinner slices

Can somebody tell me what is the difference between this knife and F208-1?

Ahh..You ask the right question. I had bought both of them. The size is the only difference): F208-2 is a bit smaller than F208-1. Both of them are good kitchen tools.

We use this knife frequently for slicing tomatoes. Wash the knife promptly after using on acidic foods to prevent corrosion
