Do you get one or two hinges in a pack?

You get a single item i.e one hinge. So if you need more than one hinge you would need to purchase as many as you need.

Is there an installation guide that comes with these, Im not sure where to drill the hole ie. how far from the edge etc?

No there was not an installation guide. Just in plastic packaging. You must make sure when installing what angle you need to turn through. Different products will fix on to different surfaces and turn through different angles . You can look on line and this information will be explained. Good luck. It’s a mine field. Hope this helps

Will the 270 degree hinge open door right out, flat against neighbouring door?

I am not 100% sure but I did use it successfully for a door that folded back on itself.
